Italian Crackers from the Dehydrator

 

Italian Flax Seed Crackers:

The below ingredients will make one tray

1 large sweet onion, finely minced

1 cup cherry tomatoes

1/2 cup flaxseed (ground … I grind mine in a an electric coffee grinder)

3 tablespoon nutritional yeast

1 tablespoon Penzey’s Pasta Sprinkle blend, or Italian seasoning

1/4 teaspoon salt

1/2 teaspoon your favorite Chili Powder

Mix all together in a medium bowl. Transfer batter onto a dehydrator tray lined with a dehydrator sheet. Using a offset spatula, spread batter to a thickness no less than 1/4-inch.

Score batter with the offset spatula or pizza cutter, being careful not to cut the dehydrator sheet. Make any size or shape crackers you heart desires.

Dehydrate at 125ºF for 15 to 20 hours. Flip sometime about half way through the drying process and remove parchment paper/dehydrator sheet. Leave partially dry crackers to finish on regular mesh sheet that comes with each tray. Once the crackers are crispy crunchy, you can remove them from the dryer and break apart.

Store in an air-tight container. Should keep well for up to a week.

RECIPE #2 – Italian Chia Crackers

Here’s all you need to fill one dryer tray…

1 large sweet onion, finely minced

1 cup cherry tomatoes

1 Tablespoon Avocado Oil (it’s okay to use any other oil)

1/2 cup ground chia seed

3 tablespoon nutritional yeast

2 tablespoons Penzey’s Pasta Sprinkle blend, or Italian seasoning

1/4 teaspoon salt

1.5 teaspoon your favorite Chili Powder

If you’d like you could add about 2 cps of finely diced broccoli to the bowl.  Add the broccoli last and before mixing into the other ingredients sprinkle some salt, pepper, onion and garlic powder liberally over the top of the broccoli and then mix in.   This will give you two sheets of crackers.  About 8 servings.
