Chocolate Chia Pudding to live for and good for you too

Today I decided to make Chia Seed Chocolate Pudding.  You won’t
believe how good it is and how easy it is to make.

Before I made my own recipe, I watched a few other people make their
own version on You Tube. My advice for you whenever you make any
of these vegan recipes is to watch a few of them because you get good
ideas for variety that way.    For instance one recipe called for peanut
butter, but I decided instead to use Macadamias.

My recipe: ( Makes 2 1/2 cup servings)

Here’s a small recipe so you can see if you like it.  To make larger quantities, simply double, triple it, etc.

*  2 TBspns Chia Seed (White)

*  1 cup almond milk

*  2 Tbspns of Cocoa

*  ¼ cup macadamia nut (or nut of your choice)

*  2 TB Agave Sweetener of choice

*  ¼ tspn vanilla

*  Protein Powder 1 scoop

*  Pinch of sea salt

*  Blend in Vita-Mix, Tech or other high powered blender

*  Chop some walnuts for garnish on top if you like.

Alternatively you could  make a Chia vanilla pudding with Vanilla powder

This picture Shows all my ingredients used.

I keep my vanilla in an eye dropper bottle.
It just makes my life easier.

Here is the finished pudding served.

How the pudding looked before I blended it in the Vita-Mix

A closeup of the seeds. They look like sesame seeds don't they.A closeup of how the pudding looks before I
put it in a more high powered blender.

ONE IMPORTANT THING I want to tell you is that many people on youtube are making the pudding in a blender.  You could do that, of course, but it is reminiscent of Tapioca pudding.  I’ve never really been a huge fan of Tapioca.  It’s just too slimy for me.   If you make the pudding in the blender, those little chia seeds will remain whole.  I wanted  my pudding to look like, well . . . pudding.  Sooooooooooooooo . . . I put it in my vita-mix to blow those seeds apart.  I have shown you both versions below.

My question is … does the chia seed still have the same efficacy with regard to its fiber benefits if I grind the seed so that it blows apart?  Anyone know if Chia Seed loses its fiber benefits if it’s ground up?
